RESTAURANT GENERAL MANAGER FOOD AND BEVERAGE, BUTCHA STEAKHOUSE & GRILL
Anna Zheleznyak is the General Manager of Butcha Steakhouse and Grill restaurant, and leads a dedicated team of 60 employees across its outlets at City Walk and The Beach. In this role, she steers the restaurant’s strategic vision and direction and offers her team crucial insights in leveraging a hands-on approach to ensure the smooth functioning of the values-led business.
With over 10 years in the hospitality industry, over six of which have been in senior leadership roles in hospitality companies in the USA, Ukraine and the UAE, Ukrainian-born Anna began her hospitality journey with a degree in Hospitality Management from Carnival Cruise Lines (CCL), Miami in the United States. She joined the Supper Club Steakhouse for Carnival Cruise Lines(CCL), a position that helped build her repertoire in all aspects of steakhouse and fine dining with emphasis on American and French gourmet.
Upon completion of a sommelier course at Napa Valley in California, Anna assumed a managerial role at CCL’s Supper Club Miracle, New York, the elegant fine dining steakhouse and restaurant with a bustling bar lounge and cigar lounge.
As a next step in her career path, Anna joined SKM Holding Group’s five-star luxury property in Donetsk, Ukraine – Donbass Palace and Opera Hotel, featured in the Leading Hotels of the World listing, as restaurant manager for the Lobby Lounge.
French Brasserie and all-day diner, La Terrace.Here, she learned the fine art of guest relations as well as the business and financial aspects of the hospitality business.
Anna began her Dubai sojourn at the luxurious Jumeirah Beach Hotel as Manager of a German Restaurant and Latin American Steakhouse. In this role, she spearheaded a multicultural team for the hotel’s in-house restaurants.
With a passion for continuous learning and excellence, Anna later took on the role of Operations Manager of 11 independent food and beverage outlets at the largest department store in the UAE – FDS Galleries Lafayette, managed by Emaar at The Dubai Mall. In her role, she controlled and successfully managed the profit and loss (PnL) expenses in both retail and a la carte service.

Anna has spent over ten years in the hospitality industry, over six years as a senior restaurant leader working with world wide hospitality companies all over USA, Ukraine and UAE.
At Meraas F&B restaurant Butcha , Anna Zheleznyak displays her passion for hospitality as general manager, bringing a superior level of service to the steakhouse with Turkish origin.
After graduation, Teachers training University (Ukraine) and Crown Hospitality Management courses at CCL, Miami (Florida. USA), and accepted a chef server position at CCL (Carnival cruise lines, Supper Club Steakhouse), which helped expand the American and French knowledge of the steakhouses and fine dining.
Anna was soon promoted to sommelier (sommelier course at Napa Valley, California , USA) and went on to accept a managerial role at Supper Club Miracle ( CCL, NY) in classy fine dining steakhouse restaurant with a bustling bar lounge and cigar lounge.
In 2009, Anna moved on to SKM Holding Group: Donbas Palace and Opera Hotel (Leading Hotels of the World listing) , a modern and upscale 5 star establishment, where as the restaurant manager (Lobby Lounge, French Brasserie and all day dining La Terrace) she learned the importance of not only making guests feel at home, but professional financial side of hotel hospitality.
After two years at Donbas Palace Hotel, Anna took her newfound knowledge and skills to Jumeirah Beach Hotel , a popular UAE 5 star resort in Dubai,where she developed a true desire to build professional F&B team in the restaurants:Der Keller and La Parrilla, establish meaningful relationships with regular hotel guests.
The constant search for a greater challenge brought Anna to Dubai Mall (Emaar) to the largest department store FDS Galleries Lafayette as Operations Manager of 11 independent Food and Beverage counters located in Gourmet. From day one, Anna valued the company’s dedication to their staff and was excited with the position of Operation Manager controlling PnL expenses in both retail and a la carte service , but made it her goal to move up to a general management position in Meraas.
In her current role as general manager, Anna hopes to provide a solid foundation for the staff members with proper motivation and professional coaching. Anna has been the most influential professional experience thus far in her career, and she strives to continue to learn and be challenged in her role.
